Whole Pheasant Recipes

This is sure to be one of your favorite whole pheasant recipes!
Ingredients:
2 pheasants – whole
2 cups white wine
1/2 cup plum preserves
1/2 cup chicken stock
3 tbsp unsalted butter
3 garlic cloves – minced
2 green onions – chopped finely
1 tbsp fresh ginger – grated
1/2 tsp salt
1/2 tsp cayenne pepper
Directions:
Melt down the butter in a saucepan. Then add green onions, garlic, ginger, and cayenne pepper to the melted butter. Cook for 4 minutes. Next add stock, wine, and preserves to the mixture. Cook for another 3 minutes. Brush down the pheasants with the mixture. Then cover and marinate in refrigerator for 2-3 hrs.
Heat up the grill to a medium heat. Lightly oil the grill grates and place the pheasant on, save the marinade. While the pheasant is grilling, put marinade in saucepan and simmer until mixture is reduced by half. Cook birds for 45-60 mins, or until juices are clear. Remove from grill, slice pheasant up, and serve with the sauce.
