Turkey Leftover Recipes – Tex-Mex Soup

For wild turkey or store bought turkey. Add this to your turkey leftover recipes list you won’t regret it!
Ingredients:
1 tbsp olive oil
1/2 cup onion – minced
3 cloves garlic – minced
1/2 tsp oregano
1/2 tsp cumin
1 tbsp dried parsley
2 tsp chili powder
4 cups water
1 (10.75 oz) can condensed tomato soup
1 (28 oz) can diced tomatoes
1 (14 oz) can black beans, rinsed, drained
1 cup salsa
4 cups shredded cooked (leftover) turkey
3 chicken bouillon cubes
2 cups frozen corn
1/4 cup fresh cilantro – chopped
1/2 cup sour cream
Soup Toppings:
6 cups corn tortilla chips
1 cup shredded cheddar-monterey jack cheese
3/4 cup green onions – chopped
1/2 cup sour cream
1/2 cup fresh cilantro – chopped
Directions:
Start by heating up olive oil in a large saucepan over a medium heat. Then throw in the minced onions and cook about 4 minutes until they soften. Next throw in the chili powder, garlic, oregano and cumin. Cook this for 1 min while stirring.
Now mix in tomato soup, water, salsa, diced tomatoes, parsley, shredded turkey and bouillon cubes. Bring this all to a boil, reduce heat, and simmer 5 mins or until bouillon cubes are completely dissolved. Finally mix in the cilantro, corn, black beans, and sour cream. Simmer for 20-30 mins longer.
Serve the soup with chopped green onion, crushed tortilla chips, shredded cheese, remaining cilantro and sour cream.
