Sweet Bacon Wrapped Elk Recipe

Quick and easy elk recipe you will enjoy!
Ingredients:
2 lbs elk tenderloins
1/2 lb of your favorite bacon
2 cups soy sauce
3 cups of brown sugar
1/4 cup of white sugar(optional)
Directions:
Mix brown Sugar and Soy sauce together and use as a marinade. Put the elk tenderloin in a zip lock bag add the marinade. Seal the bag and shake it up to cover the meat well. Place in the refrigerator for a minimum of 3 hours. If you like leave it in over night to get more flavor in the meat.
Next take the elk meat out of marinade(keep marinade for later) and wrap it all up in bacon securing with toothpicks. Then set the elk tenderloin(wrapped in bacon)on a baking sheet with slits and a drip pan. Now take some of the remaining marinade and spread it on the loin. You can baste the loin throughout the cooking process.
Set the baking sheet on the middle rack of oven and cook for 25-35 mins at 350. 25 mins will produce more of a rare finish. With 10 mins left you can sprinkle the white sugar on top of the bacon. This will give it a really sweet flavor. This is optional.
Once you have cooked the elk to your desired wellness, place it on a cutting board and cut it into 1/2 pieces. Serve and enjoy.
