Southern Rabbit Recipes

Amazing and tasty southern rabbit recipes!

Ingredients:

1 rabbit – cut into pieces

1/3 cup flour

1/2 tsp salt

1/8 tsp cayenne pepper

1/8 tsp black pepper

3 tbsp flour

1 1/2 cups milk

brown bouquet sauce

vegetable oil

salt and black pepper to taste

Directions:

In a gallon zip lock bag add 1/3 cup of flour, black pepper, cayenne pepper and salt. Shake around to mix. Then drop in the rabbit pieces and shake all around to coat completely.

In a frying pan heat up ΒΌ inch of oil over med-high heat until hot. Add the coated rabbit. Brown up, reduce heat and cover tightly. Simmer(low heat) until tender, 35-45 mins. Next place rabbit on paper towels to drain excess oil and set aside. Place the rabbit in a pan cover with tin foil. Set in the oven on warm.

Now discard all but 3 tbsp of the oil. Over medium heat stir flour into the oil and mix in the milk. Cook over medium heat, stirring constantly, until thick and bubbling. Add salt and black pepper to taste. Add bouquet sauce if you want a darker color. Serve gravy over the rabbit and enjoy.
