Roasting Turkey Breast Recipe (Wild)
Ingredients
1 tablespoon virgin olive oil
1 tablespoon soft butter
1 teaspoon garlic powder
1 teaspoon poultry seasoning
1 teaspoon thyme
1 teaspoon sage
¼ cup minced onion (white)
¼ cup minced celery
¼ cup minced carrots
1 cup chicken broth
1 turkey breast (wild)
1 roasting bag
Directions
Mix the butter and olive oil tog and add the spices. Set aside for later use.
Mix the minced vegetables with the chicken broth. Set aside for later use.
Put turkey breast into the roasting bag, and place the bag into a shallow baking pan. Using cooking gloves smear the spiced oil on the turkey. Make sure the whole turkey is covered with oil and try to avoid getting oil on bag. Pull the open end of the bag up (toward ceiling) and out of the shallow pan. This will prevent the broth from escaping when you pour them into the bottom of the bag.
Tie the bag shut and make several cuts in the top of the bag. Place the pan into the oven that has been preheated to 325 degrees. Make sure the bag does not touch the sides or racks in the oven or it will melt. Roast for approx 90 minutes. After the first 45 minutes check every 15 minutes for progress. Insert a meat thermometer. The turkey is done when the temperature reaches 170 degrees.
Serves 4 people
