February 24, 2011 by

Hush Puppies That Bite

Ingredients

White Self Rising Corn Meal
1 can beer
Salt
Pepper
White Sugar
Canned Corn
1 small jalapeño
1 sweet onion
1 egg
Milk

Directions

This is a family recipe for hush puppies and is great!
Add 3 cups of white self rising corn meal in a large mixing bowl
Add ½ can of beer, ¼ cup milk, 1 egg, 1 teaspoon salt, 1 teaspoon sugar, ½ teaspoon black pepper and stir gently until corn meal is a paste. If the mix is too thin add a little more corn meal. You want it where you can make a ball shape out of it.
Chop a small sweet onion and add 1/4 cup of chopped onion
Add 1 tablespoon of yellow canned or frozen corn
Add 1 teaspoon of chopped jalapeño pepper – more if you like a lot of bite!
Stir in all ingredients until evenly distributed
Use a deep fryer with oil about 300 degrees
Rub a little corn meal on your hands and remove paste from bowl and form golf ball size hush puppies.
Gently drop in oil
Cook until a golden brown
Best served with fried catfish or fried walleye. Hopefully you enjoy our recipe for hush puppies! Enjoy!!
