Excellent Rabbit Sausage Recipe!
Ingredients:
1 3ft pork sausage casing
3 lbs rabbit, cut in to squares(cubed)
1 tsp salt
1 tbsp rosemary
1/2 tsp black pepper
1/2 tsp white pepper
1/2 tsp dried thyme
1/2 tsp freshly grated ginger
2 tbsp chopped up fresh chives
2 tbsp chopped up fresh parsley
Directions:
Soak the pork casings by following the directions on the package. Next take all of your ingredients and mix them together. Then grind them all through a meat grinder stuffing them into the pork casings. Twist off in 3-5 inch links.
