Kentucky Pride Fried Potatoes

Please enjoy my favorite fried potato recipe that only takes minutes to make!  A summer time favorite!

Ingredients

6 to 8 large Idaho potatoes
1 large white sweet onion
1 green onion
Salt
Pepper

Directions

Wash and peel potatoes and white onion.
Soak in salt water for 10 minutes.
Rinse and allow to drain.
Chop white onion and green onion.
Cut Potatoes into ½” cubes.
Add salt and pepper to taste while potatoes are still wet.
Heat canola oil in a skillet and add potatoes and onions once oil is around 300 degrees.
Cover skillet with lid and allow the potatoes to cook for about 5 minutes.
Carefully remove cover and continue cooking for another 5 minutes before turning.
Turn potatoes with spatula gently and continue cooking until potatoes start turning brown.
Remove and place on paper towels to remove excess oil.
Allow 5 minutes to cool and enjoy.
Best served with fried fish or grilled hamburgers!
