Duck Breast Recipes

“No Marinade” Duck breast Recipe

Ingredients

4 duck breasts
8 slices of bacon
1 package of crumbled blue cheese
1 package of Pepper Jack cheese
2 jalapenos (sliced or minced)
toothpicks

I do a lot of duck hunting, so I have plenty of duck breasts laying around. That’s where it helps to have some quick and easy duck breast recipes. I usually prepare my duck with marinade, but recently I was turned on to this recipe from a buddy who claims you don’t need a marinade when you try this!

So basically start off by taking your duck breast, and “butterfly” it…or simply cut down the middle so you can insert ingredients IN the duck breast. Now take your butterflied duck breast and fill it with the blue cheese, pepper jack and minced jalapeno.

Wrap each breast with the slices of bacon. Use the toothpicks to keep the bacon in place. Grill until medium rare. (About two minutes per side) High heat in the beginning will sear the outside of the bird and help keep in juices. DO NOT OVERCOOK. That’s it! Simply slice it up and you’ll see how great the cheeses and spice compliment the duck. One of our new favorite duck breast recipes!
