Chili Recipe with Ground Elk

Ingredients:
1 1/2 lbs – elk meat ground
2 large onions- diced
2 – 10 oz cans – tomato sauce
1 – 15 oz can – kidney beans – drained
1 – 14 1/2 oz can – Italian-style stewed tomatoes
1 – 4 oz can – diced green chiles – (optional)
1 1/2 tsp ground cumin
1 1/2 tbsp chili powder
1 tsp dried oregano
1 tsp pepper
1 tsp salt
1/2 cup brown sugar
Directions:
In a frying pan brown up your ground elk meat with the diced onions. Make sure to drain off the fat afterwards.
Next combine the rest of the ingredients in a pot, and add the ground elk meat with onions. Cover the pot and simmer on low for a minimum of 1 hour. The longer you let the chili (ground elk recipe) sit the better it tastes. Serve and enjoy!
